Mile High Lemon Meringue Pie

This pie rises above the rest.

Preparation Time: 20-30 minutes
Cook Time: about 12-15 minutes
Total Time: 2.5-3.5 hours (after sitting to cool)
Yield: 1 pie
Servings: 8

Ingredients
1/3 cup cornstarch
1/3 cup flour
1 1/4 cups sugar
1/4 teaspoon salt
2cups cold water
5 egg yolks, beaten
1/2 cup lemon juice, freshly squeezed
2 tablespoons grated lemon rind
4 tablespoons butter
1 baked pie shell
8 egg whites
1/2 teaspoon cream of tartar
Pinch salt
5 tablespoons sugar
1/2 teaspoon vanilla
 

Prep
Combine cornstarch, flour, sugar, salt, and cold water
Stir and cook over medium flame for 4 minutes
Add a little of this mixture to 5 egg yolks that are slightly beaten in another bowl
Egg yolks will warm without cooking
Add to rest of cornstarch mixture
Continue cooking mixture for 5 minutes on low flame
Add 1/2 cup freshly squeezed lemon juice
Add 2 T. freshly grated lemon rind
Add 4 T. butter and let melt into mixture
Let mixture cool and pour into baked pie crust
Beat 8 to 12 egg whites
Start on low
Add 1/2 t. cream of tartar, pinch of salt, and 5 T. sugar, little by little (the slower you add the sugar the glossier the egg whites will be)
Add 1/2 t. vanilla
Pile beaten egg whites onto pie and seal to crust
Bake at 375 for 8 minutes
Do not cut for 2 to 3 hours
