Maryland Crab Cakes

Great Maryland-style crab cakes

Preparation Time: about 10-20 minutes
Cook Time: 10-12 minutes
Total Time: about 30 minutes
Yield: 8 cakes
Servings: 4

Ingredients
1 pound lump crabmeat, canned
1 egg, beaten
5 tablespoons mayonaise
1 tablespoon fresh parsley, chopped
2 teaspoons worchestershire sauce
1 teaspoon yellow prepeared mustard
1 teaspoon salt
1/4 teaspoon white pepper
1/2 cup bread crumbs
2 tablespoons olive oil
 

Prep
Drain crabmeat an place in bowl
Remove shell, being careful not to break up the meat
In a separate bowl, mix together egg, mayonaise, parsley, worchestershire sauce, mustard, salt and pepper
Gently fold bread crumbs into crabmeat with a rubber spatual
Fold egg mixture gently into crabmeat without breaking up toe meat
Refrigerate mixture 1 hour
Form mixture into 8 cakes, approximately 2 1/2 inches wide and 3/4-inch thick
Place cakes on foil-covered baking sheet that has been brushed lightly with oil
Bruch the cakes lightly with olive oil or melted butter
Cakes may be refrigerated until ready to broil and serve
Broil cakes for 10 to 12 minutes or until golden brown
Serve 2 cakes per person
Garnish with cold mustard sauce
