Yummy Morning Smoked Sausage

Have this with your favorite eggs or potato pancakes. It's slightly sweet, savory and simple, and fills your kitchen with a wonderful smell to come home to (or wake up to in the morning, with a steamy cup of coffee or cocoa).
Preparation Time: 7 min.
Cook Time: 17 min.
Total Time: 25 min.

Yield: Can be easily doubled.
Servings: 4-6

2 tbs. oil
1 large onion
4 smoked sausages (about 1 lb.)
1/3 apple juice

Cut onion in half and slice each half into 1/4-in. slices.
Cut sausage diagonally into 1/2-in. pieces.
Heat oil in large skillet over medium-high heat.
Add onion slices and cook till tender, about 10 min., stirring occassionally. Add sausages to onions, cover and cook for 5 min., stirring occassionally. Add apple juice and turn fire down to low. Simmer 2 minutes or more. (You may cook longer if you like to carmelize the onions.) Serve while hot or still very warm.
