Healthy Chicken And Rice Salad

This dish is not only good for you, it tastes great too!

3 cups cooked rice
2 cups cooked chicken strips
1 15 and 1/2 oz red kidney beans, drained and rinsed
1 green pepper, diced
1/4 cup sliced green onions
1/4 cup oil
1/3 cup white wine tarragon vinegar
1 teaspoon dried terragon leaves
Pepper
Lettuce
Cherry tomato halves

Cook the rice
Cook the chicken
In large bowl, toss together rice, chicken, beans, green pepper, and onion
In small bowl, stir together oil, vinegar, and seasonings until well blended
Pour over rice mixture
Toss to coat well
Cover; refrigerate for several hours
Serve in lettuce lined bowl and garnish with cherry tomato halves
