Buffalo Wings with Bleu Cheese Dipping Sauce

A spicy snack that's great for parties

3 pounds chicken wings
3 tablespoons oil
1 tablespoon hot-pepper sauce
1 teaspoon paprika
2/3 cup crumbled bleu cheese
2/3 cup reduced fat sour cream
4 tablespoons white wine vinegar
2 tablespoons finely chopped green onions
1/2 teaspoon coarsely ground black pepper
2 tablespoons milk
3 celery stalks, cut into sticks
1 tablespoon green onion

Prepare grill according to directions
Chop off wings at tips
Cut in half at joint
Place in shallow dish
Combine oil, hot pepper sauce, and paprika
Add to chicken, turning to coat pieces evenly
Set aside to marinade while making sauce
In a small bowl, combine bleu cheese and sour cream
stir in vinegar, green onions, and pepper, mashing with wooden spoon to combine
Whisk in 1-2 T. milk until sauce is smooth
Sprinkle top with remaining green onions and refrigerate if not using immediately
Grill wings about 15 min., turning occaisonally and brushing with any remaining marinade, until lightly charred and no longer pink inside
remove to platter and sprinkle with a few more dashes of pepper sauce
serve with celery sticks and bley cheese dipping sauce
