Roasted Red-Hot Potatoes

Give your potatoes a spicy kick!
Preparation Time: 10-20 minutes
Cook Time: 30-40 minutes
Total Time: 40minutes to 1 hour

Yield: 1 batch
Servings: 4

3 pounds red potatoes, little
1/3 cup extra-virgin olive oil
2 tablespoons prepared grainy mustard
1 teaspoon cayenne pepper
1/2 teaspoon salt

Heat oven to 375 degrees
Halve or quarter potatoes and arrange in roasting pan
In a small bowl, combine oil, mustard, cayenne pepper, and salt
Toss potatoes with 2/3 of the mustard mixture
Bake uncovered for 30-40minutes, or until tender and nicely browned
Toss potatoes with remaining mustard mixture and warm through in oven
