Baked Flounder

My mom would cook flounder we had caught that morning just like this. The fresher the fish the better. She would also cook this on Friday's during Lent with her Mac and Cheese.

Preparation Time: 10 minuts
Cook Time: 20 minutes
Total Time: 30 minutes
Yield: 1 meat
Servings: depends on amount of fish

Ingredients
Flounder, skinned, boned, filleted
fresh lemons
salt and pepper
onion
parsley
aluminum foil
 

Prep
Line a large baking pan with foil .
Place the flounder on the foil.
Sprinkle with salt and pepper
Slice the onions and lemons in rings.
1 lemon and 1 small onion will be used for a pound of flounder.
Lay the lemon and onion rings on the fish.
Sprinkle with parsley
Cover the pan with another layer of aluminum foil.
This helps the fish stay moist.
Bake at 350 for 20 minutes or until fish is done.
