Oriental Chicken Salad

A great tasting salad with an oriental flavor
Preparation Time: 10-20 minutes
Cook Time: 12-15 minutes
Total Time: 20-35 minutes

Yield: 1 bowl
Servings: 4

Nonstick spray coating
4 medium chicken breasts, skinned and boned
3 tablespoons light soy sauce
2 teaspoons fresh ginger root, grated
5cups mixed greens, coarsely chopped
3 cups vegetables, pea pods, bean sprouts, etc.
1 cup red cabbage, coarsely chopped
2 green onions, sliced
1 3 ounce package quick oriental noodles
Oriental salad dressing
2 teaspoons sesame seed

Heat broiler
Spray the rack of a broiler pan with nonstick coating
Place chicken breasts on rack
Stir together soy sauce and ginger root
Brush onto chicken
Broil 4 inches from heat for 12 to 15 minutes, turning once and brushing with soy mixture
Remove from heat and cool slightly
Cut chicken into bite-sized strips and set aside
Toss together the mixed greens, assorted vegetables, red cabbage, and green onions in a large bowl
Break uncooked Oriental noodles into small pieces
Add to salad
Pour about 1/2 cup Oriental salad dressing over salad
Toss to coat
Line four dinner plates with salad greens
Spoon salad onto plates
Top each with one-fourth of the chicken
Drizzle remaining dressing over chicken
Sprinkle with sesame seed
Serve immediately
Oriental salad dressing:
combine 1/3 cup unsweetened pineapple juice, 1/4 cup rice vinegar or white vinegar, 1 tablespoon reduced sodium soy sauce, 2 teaspoons sugar, 1 1/2 teaspoons sesame oil, and 1/4 teaspoon pepper in a screw-top jar
Cover and shake well
Makes about 2/3 cup
