Grilled Sweet Potatoes With Apples

A side dish thats tastes like desert!

Preparation Time: 10 minutes
Cook Time: 30-40 min.
Total Time: 40 minutes
Yield: 1
Servings: 4

Ingredients
1/2 cup apple cider or apple juice
2 tablespoons apple jelly
1 teaspoon cornstarch
1/4 teaspoon ground nutmeg
2 medium sweet potatoes, cut 1/2 in thick slice
2 medium apples, cut in wedges
 

Prep
In a small saucepan stir together apple cider, apple jelly, cornstarch and ground nutmeg to make a sauce.
Cook and stir till thickened and bubbly.
Cook and stir for 2 minutes more.
Remove from heat; set aside.
Toss together sweet potatoes and apples.
Tear off a 36 X 18 inch piece of heavy foil
Fold in half to make a double thickness of foil that measures 18 X 18 inches.
Place sweet potato mixture in the center of the foil.
Drizzle with half of the sauce.
Bring up two opposite edges of the foil and seal with a double fold.
Then fold remain ends to completely encase the packet, leaving space for steam to build.
Refrigerate the packet till ready to grill.
Place foil packet on the grill rack and grill for 30 to 40 minutes.
Use rest of sauce on whatever meat you are serving, such as turkey or pork.
