Preparation Time: 10-15 minutes Cook Time: about 7 minutes Total Time: about 20 minutes Yield: 1 batch Servings: 2 2 tablespoons butter 1 clove garlic 2 baking potatoes, cut crosswise in 3/8   Place the butter in a custard cup and put garlic through a press into it Microwave on high for about 30 seconds to melt the butter Dip the potatoes into the garlic butter and arrange in a single layer in a shallow microwave-safe casserole In a small bowl, combine parmesan and bread crumbs and sprinkle mixture over the potatoes Cover the dish with plastic wrap and microwave on high until potatoes are done (about 6 minutes) Let stand, covered, for 5 minutes before serving
