True Italian Pasta Putanesca

A simple pasta dish
Preparation Time: about 10 minutes
Cook Time: 15-20 minutes
Total Time: about 30 minutes

Yield: 1 batch
Servings: 4

 |
1/2 cup olive oil
1 tablespoon butter
4 garlic cloves, sliced thin
1 teaspoon red pepper flakes, or a little more
1 anchovy fillet, chopped fine
16 Roma tomatoes, peeled, seeded, and diced
1/4 cup chopped parsley
1/4 cup black olives, sliced
1/4 cup capers, drained and rinsed
1 pound penne pasta

Put olive oil and butter in frypan
Saute garlic
Add pepper flakes, anchovy, and tomatoes
Add salt and pepper
Cook 15 to 20 minutes
When done, andd 1/4 cup chopped parsley, 1/2 cup black olives, 1/4 cup capers, and penne pasta cooke al dente
