Caramel Apples

A fairground favorite

Preparation Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Yield: 4 apples
Servings: 4

Ingredients
1 cup sugar
1/2 cup light corn syrup
1/2 cup sweetened condensed milk
1/4 cup heavy cream
1/2 cup milk
2 tablespoons unsalted butter
1 teaspoon pure vanilla extract
4 apples
1 cup chopped walnuts
 

Prep
In medium saucepan over low heat, combine first six ingredients
Cook, stirring constantly, until mixture reaches 248 degrees on candy thermometer (or until a bit of syrup dropped into cold water forms a firm, pliable ball)
Stir in vanilla, then put pan in bowl of hot water to keep caramel soft
Insert wooden ice cream sticks into stem ends of apple
Dip apples in caramel, coating well
Allow excess to drip off, then roll in walnuts and let cool on wax paper for at least one hour
