Apple Blueberry Peach Cobbler

A fruity dessert for any occasion!
Preparation Time: 20-30 min.
Cook Time: 30 minutes
Total Time: about 1 hour

Yield: 1 cobbler
Servings: 8

4 cups fresh peaches, peeled, pitted, and sliced
2 cups pealed diced tart apples
2 cups fresh blueberries, rinsed
1 cup + 1 T sugar, divided use
3 tablespoons cornstarch
1 teaspoon cinnamon
2 cups flour plus extra for dusting
1 tanlespoon baking powder
1/2 teaspoon salt
1 cup nonfat sour cream

In a medium bowl, toss peaches, apples, and blueberries with i cup sugar, cornstarch, and cinnamon
Turn fruit into lightly greased 2 1/2 quart baking dish and dot with 1 T butter
In another bowl, mix flour, baking powder, salt, and remaining 1T sugar
Cut in remaining 5 T butter until mixture resembes coarse meal.
With a fork, stir in sour cream until dough holds together like pie pastry
Shape dough into ball and place on a sheet of well-floured wax paper
Pat into shape that matches top of baking dish, then dust dough with flour and lightly roll out
Using the paper as a carrier, place dough on fruit, paper side up
Carefully removepaper and pat dough intop place
Pierce several times with the tip of a knife
Bake in preheated 400 degree oven for 30 minutes or until pastry is golden brown and juices are bubbling
Let cool 15 minutes
