Chocolate Pecan Pie

A chocolatey twist on an already tasty dessert
Preparation Time: about 30-45 minutes
Cook Time: 55 minutes
Total Time: about 1 1/2 hours

Chocolate pastry Dough:
(2 1/2 cups flour
1/2 cup cocoa powder
1 cup confectioners' sugar
1 egg, separated
pinch of salt
3/4 cup plus 2 T. culd butter, cut into pieces)
2 3/4 cups pecans, divided ucet tablespoons melted butter
3 ounces couverture, professsional high-quality chocolate
6 tablespoons butter
1/4 cup brown sugar
3 eggs
2 tablespoons cream
1/4 cup flour

To make pastry dough, place flour on a clean surface and make a well
Place cocoa powder, confectioners' sugar, egg yolk, salt, and butterin well
Mix ingredients with a fork, working in a little flour at the same time
Knead into a smooth dough, using egg white as needed
Form into a ball
Wrap in plastic wrap and refrigerate at least 1 hour
Roll out dough evenly and place in a 10-inch springform pan
Line with parchment paper and fill with pie weights
Bake in preheated 350 degree oven for 15 minutes
Remove weights and parchment paper, and allow to cool
Toss pecans with melted butter and place on cookie sheet
Toast in preheated 350 degree oven for 20 minutes
Cool
Chop 1 3/4 cups pecans and chocolate coarsely
Set aside
Cream butter with sugar and add eggs one at a time
Stir in cream and flour
Stir in chopped nuts and chocolate
Spoon filling into pastry shell
Top with remaining 1 cup pecans, working from the edge to center
Bake at 350 degrees for 55 minutes
Halfway through, cover with foil to prevent burning
Cool before slicing
