Creamy Key Lime Pie

A great sweet pie that everyone will love

Preparation Time: Varies
Cook Time: 20-25 minutes
Total Time: Varies
Yield: 1 pie
Servings: 8

Ingredients
2 cups flour
1/2 teaspoon salt
1/2 cup shortening
2 1/2 tablespoons unsalted butter, chilled
1/3 cup ice water
1 pound cream cheese, room temp.
3/4 cup lime juice
1 14 oz can sweetened condensed milk
zest if one lime
1 cup creme fraiche
1/4 cup powdered sugar
 

Prep
To make crust:
In food processor, pu in flour, salt, shortening, and butter and pulsate a little at a time
Add water and again pulsate a little at a time to form a ball
Wrap dough in plastic wrap and place in refrigerator for one hour
Roll out on plastic wrap with plastic wrap on top also
Pus in pie dish
Place sheet of parchment paper on top of dough in pie plate and add raw beans to cover up to top of pie (to use as pie weights) and bake at 350 degrees for 20 to 25 minutes Cool completely

For filling:
In food processor, put in 2 cream cheese (room temp.), 3/4 cups fresh lime juice, and one can sweetened condensed milk
Process until smooth
Add zest of 1 lime
Pour into cooled pie crust

For topping:
Beat together creme fraiche and powdered sugar until soft peaks form
Spread over pie
Chill in refrigerator for 5-6 hours
Decorate with thin lime slices
