Chicken Chopped Salad

This Asian salad is amazing
Preparation Time: 10-15 minutes

4 cups salad greens, julienned
1/4 red bell pepper, julienned
1/4 yellow bell pepper, juienned
1/2 cup bean sprouts
1/4 cup + 1 T. toasted almonds, divided use
1 cup rotisserie chicken, julienned
1/4 cup fried won-ton strips, julienned
1 cup cellophane noodles, fried in oil
1 tablespoon almond paste
1 teaspoon ginger root, peeled and minced
1 tablespoon parsley, finely chopped
3/4 teaspoon sweet Thai chili cauce
1 tablespoon soy sauce
1/8 cup rice vinegar
1 tablespoon sesame oil
1/4 cup salad oil
1 dash cayenne pepper

In a large bowl, mix together salad greens, bell pepper, bean sprouts, 1/4 cup toasted almonds, chicken, and fried won-ton strips
Garnish with cellophane noodles
Make dressing by combining in blender almond paste, ginger root, parsley, Thai chili sauce, soy sauce, rice vinegar, sesame oil, salad, and cayenne
Fold in 1 T. almonds
Toss with salad mix and serve
