Corn And Three-Bean Pasta Salad

This pasta salad is great
Preparation Time: 10-15 minutes

8 ounces small-shell pasta
1 cup canned black beans, drained
3/4 cup red kidney beans, drained
3/4 cup canned white kidney beans, drained
3/4 cup corn niblets, drained
1 1/4 cups diced red bell pepper
3/4 cup diced carrots
1/2 cup diced red onion
1/4 cup lemon juice
3 tablespoons oil
3 tablespoons red wine or cider vinegar
2 tablespoons crushed garlic
1/2 cup chopped parsley

Cook pasta in boiling water according to the package instructions or until firm to the bite
Rinse with cold water
Drain and place in serving bowl
Add all three kinds of beans, corn niblets, red peppers, carrots, and onion
Make the dressing: In a small bowl combine lemon juice, oil, vinegar, garlic, and parsley
Pour dressing over pasta and vegetables and toss
