Red, White, And Blue Salad Mold

A patriotic treat that is great for parties

Total Time: varies Yield: 1 mold
Servings: 8

1 6 oz. package strawberry gelatin powder
1 cup boiling water
1 10 oz. box frozen strawberries, half thawed
1 20 oz. can crushed pineapple
2 medium bananas, sliced
1 cup sour cream
1/4 cup frozen, thawed, or fresh blueberries

Dissolve gelatin in the boiling water, stirring until completely dissolved
Add the strawberries and the can of crushed pineapple, including the juice
Stir until the strawberries are completely thawed
Add the bananas and pour half the mixture into a 1 1/2 or 2-quart mold
Chill until set, leaving the remaining mixture at room temperature
When the first half is set but not completely firm, spread evenly with the sour cream and sprinkle with bueberries on top, pushing them into the sour cream
Chill at least 6 hours or, preferably, overnight
Un mold and serve as a salad or dessert
