Warm Spinach Salad With Bacon Vinaigrette

This salad is amazing

Preparation Time: 10-20 minutes
Cook Time: varies
Total Time: varies
Yield: 1 bowl
Servings: 4

Ingredients
1 pound baby red potatoes
1 teaspoon salt
1/2 pound bacon, diced
1 1/2 cups yellow onions, diced
1 small garlic clove, minced
1/4 cup balsamic vinegar
1/4 cup olive oil
1/4 cup walnut oil
1 pound fresh spinach leaves, washed, stems removed
1 cup walnuts, roasted
1/2 cup bleu cheese, crumbled
 

Prep
Boil potatoes in water and add salt
When fork tender, remove from heat
Cut in quarters and set aside
Fry bacon until half done
Add onions and continue to fry until bacon is done and onions are golden brown
To make the vinaigrette, mix together the minced garlic, balsamic vinegar, olive oil, and walnut oil in a large bowl
Toss the potatoes in the vinaigrette
Add the bacon and onion mixture
Add the spinach leaves and toss
Put 1 cup walnuts in a pan and roast in 350 degree oven for 5 minutes
Sprinkle over salad
Top with crumbled bleu cheese
