Warm Turkey Salad

A great oriental-style salad
Preparation Time: 15-20 minutes
Cook Time: about 15 minutes
Total Time: 30-35 minutes

Yield: 1 bowl
Servings: 4

12 ounces turkey breast tenderloin steaks
3 tablespoons soy sauce
2 cloves garlic, minced
1 1/2 teaspoons grated ginger root
1 teaspoon sugar
Few dashes bottled hot pepper sauce
3 tablespoons oil
2 tablespoons lemon juice
1/2 teaspoon toasted sesame oil
2 cups fresh green beans, cut into 1

Rinse turkey and pat dry
Cut into thin bite-sized strips
In a medium bowl stir together turkey, soy sauce, garlic, ginger root, sugar, and hot pepper sauce
Cover and refrigerate for 1 to 2 hours
For dressing, in a small bowl stir together 3 T. cooking oil, lemon juice, and sesame oil
Set aside
If using fresh green beans, precook in a medium saucepan in a small amount of boiling water for 10 minutes
Drain, and set aside
Pour 1 T. cooking oil into a wok or 12-inch skillet
Add more oil as necessary during cooking
Preheat over mediu-high heat
Stir-fry green beans in hot oil for 3 minutes or until crisp-tender
Remove green beans from the wok
Add turkey mixture to the hot wok
Sprinkle with sesame seed
Stir-fry for 2 to 3 minutes or until no pink remains in turkey
Remove the wok from the heat
Return green beans to the wok
Add sliced radishes, cucumber, green onions, celery, and dressing
Stir ass ingredients together to coat the dressing
Toss with mixed greens
Serve immediately
Garnish with whole radishes, if desired
