Grilled Cajun Chicken Salad

Cook Time: 15 to 18 minutes

1/4 cup oil
1/4 cup vinegar
1 tablespoon sugar
1 tablespoon fresh thyme
1/4 dry mustard
1 tablespoon oil
1 teaspoon onion powder
1 teaspoon pepper
1/4 teaspoon ground red pepper
1/4 teaspoon salt
4 skinless chicken breast halves boneless
4 cups torn mixed greens
1 medium carrot, shredded
1/4 cup radishes, sliced and halved
1 green onion, sliced

In a screw-top jar combine 1/4 cup oil, vinegar, sugar, thyme and dry mustard.
Cover and shakewell.
Chill till serving time.
In a small mixing bowl combine 1 Tablespoon oil, onion powder, pepper, ground red pepper and salt.
Set aside.
Rinse chicken, pat dry. Place chicken on the grill rack and brush with half the sauce. Cover and grill for 15 to 18 minutes or till chicken is tender and no longer pink, brushing occasionally with remaining sauce.
In a large salad bowl combine all vegetable ingredients.
Cut chicken into bite-size pieces.
Add chicken and dressing to salad.
Toss to mix.
