Crabmeat-Mushroom-Spinach Calzone

A great twist on an already great food

2 loaves frozen bread dough, thawed
1 tablespoon chopped fresh thyme
1 medium red onoin, chopped
1 clove garlic, minced
3 cups sliced mushroom
Salt & pepper
3 tablespoons olive oil
2 tablespoons chopped dill weed
4 zucchini, sliced (very small)
1/2 bunch fresh spinach leaves, washed and dried
2/3 cup shredded Jack cheese
2/3 cup shredded mozzarella cheese
8 ounces flaked cooked crabmeat

Combine bread dough loaves, let rise until doubled
Sprinkle with thyme and roll on floured surface into 20 inch circle
Transfer to greased 10 inch springform pan, letting edges drape over sides
Saute onion, garlic, mushrooms, and seasoning in 2T. olive oil until tender (about 5 minutes)
Stir in dill and set aside
Saute zucchini in remaining oil until tender
Layer mushroom mixture, half zucchini, half spinach leaves, half cheese, and half crab meat; repeat
Bring dough togetherover top, leaving a small vent for steam
Brush lightly with oil or beaten egg
Bake at 375 degrees for 50 minutes or until golden brown and crusty
Cut into 10 wedges while warm or let cool to room temperatures
