This soup is a twist on an already great food!

Preparation Time: 30-45 minutes
Cook Time: 2-4 hours
Total Time: varies
Yield: 1 batch
Servings: 6

Ingredients
1 turkey carcass, broken up
3 ribs celery, 1/2 inch slices
3 carrots, 1/2
 

Prep
In large pot combine carcass pieces, celery, carrots, onion, broth, and enough water to cover carcass by 1-inch
Bring to boil, skimming any foam that rises to the surface
Reduce heat
Add parsley, thyme, bay leaf, and peppercorns
Simmer, uncovered, 2 to 4 hours, the longer the better
With tongs, remove carcass pieces and discard
Cut off usable meat and add to soup
Increase heat to medium
Add potatoes
Simmer until half cooked, about 10 minutes
Add noodles
Cook until potatoes and noodles are tender, about 10 minutes
Add saffron and turkey
Hat through
