Charlseton Style She-Crab Soup

A great soup from the coast

Preparation Time: 10-15 minutes
Cook Time: about 1 hour
Total Time: 1 hour 15 minutes
Yield: 1 batch
Servings: 8

Ingredients
1/2 cup butter
3 cups cream
1 quart whipping cream
1 pound crabmeat
2 tablespoons sherry
2 tablespoons salt
Cayenne Pepper
2 cups crap roe
Finely chopped parsley, for garnish
 

Prep
Melt butter in heavy saucepan over low heat
Slowly stir in milk and mix well
Cook over low heat 15 minutes, stirring occaisionally to prevent scorching (do not boil)
Pour cream into a wide skillet
Cook over medium heat 10 minutes until cream is thick
Pour cream into butter mixture and stir well
Add crabmeat and pour soup into top of double boiler set over simmering water
Cook about 30 minutes to let flavor develop
Season with sherry, salt, and cayenne
Add crab roe
Garnish with parsley and serve hot
