Italian Minestrone

A great Italian soup
Preparation Time: 15-20 minutes
Cook Time: 20 minutes
Total Time: 35-40 minutes

Yield: 1 batch
Servings: 8

1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced carrot
1 tablespoon olive oil
1 clove garlic, minced
5 cups chicken broth
1 can chopped tomatoes (14oz.)
1 can red kidney beans (16oz.), rinsed and drained
1 cup chopped escarole
1/4 cup orzo (small pasta)
1 cup green beans
1/2 cup diced zucchini

In a pot over medium heat, saute the onions, celery, and carrots in the oil for 5 minutes or until lightly browned
Add the garlic and stir for a few seconds
Add the stock, tomatoes with juice, kidney beans, escarole, and orzo
Bring to a boil over high heat
Reduce the heat to medium and simmer for 10 minutes
Add the green beans and zucchini
Cover and simmer for 5 minutes or until the beans are tender
