Old Fashioned Potato Soup

An old-ashioned favorite

Preparation Time: 10-15 minutes
Cook Time: varies
Total Time: varies
Yield: 1 batch
Servings: 6

Ingredients
5 medium potatoes, peeled and chunked
2 carrots, sliced
1 stalk celery, sliced
1 whole onion, peeled
Salt and pepper
2 tablespoons butter
1 tablespoon flour
 

Prep
In a kettle, place potatoes, carrots, celery, onion, and enough water to cover vegetables and make enough broth
Cool until vegetables are tender
Make a roux by melting the butter and adding the flour to form a smooth paste
Cook, stirring constantly, until golden
Slowly ladle a cupful of potato water into flour mixture and stir until smooth
Pour flour mixture into kettle with vegetables and cook and stir for about 3 minutes until soup thickens
