Italian Stir-Fried Pasta (Shrimp)

A great tasting pasta dish with stir-fried shrimp.

Preparation Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Yield: 1 batch
Servings: 3

Ingredients
6 ounces linguine
Boiling salted water
2 tablespoons olive oil
1 small onion, cut into bite-sized pieces
1 medium green bell pepper, seeded and cut
1/2 tespoon crushed red pepper
1 teaspoon dry oregano leaves
1 tablespoon butter
2 ounces 18 Chinese pea pods, strings removed
1 pound shelled shrimp
1/2 cup grated parmesan cheese
 

Prep
Following package instructions, cook linguine in boiling salted water until barely tender to bite
Drain well and pour onto a hot platter
While pasta is cooking, place a wok over high heat
When wok is hot, add oil
When oil is hot, add shrimp and cook for 2 or 3 minutes
Take shrimp out of wok
Add more oil
Add onion, bell pepper, crushed red pepper, and oregano
Stir-fry until vegetables are tender to bite (about 5 minutes)
Reduce heat to medium-high
Add butter to wok
When butter is melted, add pea pods and stir-fry for 1 minute (30 seconds if using frozen pea pods)
Add shrimp, stir well, and remove wok from heat
Spoon hot stir-fried mixture over drained pasta and serve at once
Offer chhese to sprinkle over individual servings
