Mexican Black Beans

A hearty bowl of soup with that extra zip!

Preparation Time: 5 min.
Cook Time: 10 min.
Total Time: 15 min.
Yield: appr. 4 1/2 cups
Servings: 4

Ingredients
1 can black beans, drained
1 can mixed vegetables
1 can diced tomatoes with green chiles
8 oz. sour cream
 

Prep
Combine the first three ingredients.
Heat thoroughly.
Serve in bowls topped with a dollop of sour cream.

Serving Suggestion: Serve with yellow cornbread or tortilla chips.

This recipe can be doubled, tripled, etc. by maintaining the 1 to 1 ratio for the beans vegetables and tomatoes with chiles. Of course, dry, frozen, or fresh ingredients can be substituted for canned.
