A chicken dish for the experienced cooker

1 large bunh broccoli, cut into spears
4 tablespoon butter
1/2 pound mushrooms, sliced
1/4 cup flour
2 cups milk, heated
2 tablespoons dry sherry
salt and freshly ground pepper
1 cup shredded cheddar cheese
8 skinnless boneless chicken breasts, poached
1/2 cup bread crumbs

preheat oven to 350
Steam broccoli spears until barely tender (3-5 min)
Arrange in botom of a buttered 9x13x2-inch baking dish
Meanwhile, in a medium sized saucepan, melt butter over moderate heat
Add mushrooms and cook until lightly browned (3-5 min)
Stir in flour and cook 1-2 min without browning
Gradually whisk in milk and cook, stirring constantly, until sauce thickens
Str in sherry
Season with salt and pepper to taste
Pour half of the sauce over the broccoli
Sprinkle half the cheddar cheese over the sauce
Cover with chicken breasts
Pour remaining sauce over the chicken
Sprinkle with remaining cheese
Top with bread crumbs
Bake 20 min, until hot and bubbly
