Mimi's Mac and Cheese

This is a dish that my mom would make when she served fish. The sharper the cheddar the better.
Preparation Time: 20-30 min.
Cook Time: 30-40 min.
Total Time: 50-70 min.

Yield: 1 casserole
Servings: 8

16 oz. elbow macaroni
2 cans of diced tomatoes
8 oz of sharp cheddar cheese shredded
salt
butter

Cook macaroni according to package directions
Drain and add to a large bowl.
Add tomatoes to the macaroni mix well.
Mix in cheddar.
Add about 1 tsp. of salt
Pour into a deep casserole dish.
Add about 2/3 cup of water.
Spread some butter on top to help browning process
Bake on 350 for 30-40 minutes until slightly browned.
