Mom's Barbecued Beef(or PorK) Sandwiches

This is a great recipe for left over roast beef as well, Just add the sauce mixture to the already cooked meat and heat.

Preparation Time: 30 minutes
Cook Time: 3 hours
Total Time: 3.5 hours
Yield: 1
Servings: 10

Ingredients
2 T oil
5 pounds Chuck roast or sirloin tip roast
2 large onions, chopped
1 large green pepper, seeded and chopped
2 stalks celery, chopped
2 large cloves garlic, minced or pressed
1 cup ketchup
1 16 oz can stewed tomatoes
1/4 cup cider vinegar
1/3 cup firmly packed brown sugar
10 onion rolls, halved
 

Prep
Heat ooil in a 6-quart Dutch oven over medium-high heat.
Add meat and brown slowly on all sides,
remove from pan and set aside
I slice the meat thin, put the meat in an oven-proof pan and add.
the onions, green pepper, celery, garlic, ketchup, stewed tomatoes,vinegar, and brown sugar that have been processed in a food processor.
Pour over meat and bake in 350 degrees oven for 3 hours or until the meat falls aprat when you take forks to shred the meat.
