Cheese- Topped Tomatoes

Great with Tomatoes from your garden.

Preparation Time: 20 Miinutes
Cook Time: 20 Minutes
Total Time: 40 Minutes
Yield: 1
Servings: 2

Ingredients
1/2 cup soft bread crumbs
1/2 cup shredded sharp cheddar cheese
1 tablespoon margarine, melted
2 large tomatoes
1 tablespoon snipped parsley or desired fresh herb
 

Prep
In a small mixing bowl combine all topping ingredients.
Set aside.
Slice tomatoes in half, using a sawtooth cut, if desired.
Sprinkle with salt and pepper.
Then sprinkle tomatoes with topping and parsley or herb.
Tear off an 18 X 18-inch piece of heavy foil.
Place tomatoes in the center of the foil and seal with a double fold.
Then fold remaining ends to completely enclose the tomatoes, leavng space for steam to build.
Grill foil packet, seam side up, on the grill rack about 20 minutes or till heated through.
Serve immediately.
