Beef Stroganoff

This is the real thing.
Preparation Time: 15 minutes
Cook Time: 45 minutes

1 T flour
1.2 tsp salt
1 pound beef sirloin cut in 1/4 inch wide stips
2 T butter
1 Cup sliced mushrooms
1/2 Cup chopped onions
1 clove garlic, minced
2 T butter
3 T flour
2 1/2 Cups beef stock
1 Cup sour cream

Combine flour and the salt
Dredge meat.
Heat skillet, then add 2T butter.
When melted, add the beef and brown quickly, flipping meat to brown on all sides.
Add mushroom slices, onion, and garlic,
cook 3-4 minutes or till onion is barely tender.
Remove the meat and mushrooms from skillet.
Add 2 T. butter to pan drippings,
when melted, blend in 3 T flour.
Slowly pour in cold stock, cook,stirring constantly,
until mixture thickens
Return meat and mushrooms to skillet.
Stir in sour cream, heat briefly.
Serve over wide noodles.
