Aegean Summer Salad

This a a great salad for dinner parties

Preparation Time: 10-15 minutes
Cook Time: none
Total Time: 10-15 minutes Yield: 1 bowl
Servings: 4

1 head romaine lettuce, julienned
1 head iceburg lettuce, julienned
1/4 head radicchio, julienned
1/2 bell pepper, roasted, julienned
1/4 cup garbanzo beans
3 kalamata olives, sliced
1/4 cup feta cheese, crumbled
1 tomato, diced
1 cucumber, peeled, seeded, juliened
1/4 red onion, julienned
2 teaspoons rice vinegar
2 teaspoons lemon juice
1 1/2 tablespoons red wine vinegar
1 teaspoon chopped garlic
1 teaspoon shallots, chopped
1 teaspoon fresh oregano, finely chopped
1 teaspoon fresh basil, finely chopped
1/2 cup salad oil
Salt and pepper

In large bowl, mix romaine, iceburg, radicchio, roasted pepper, garbanzo beans, olives, feta cheese, tomato, cucumber, and red onion
Set aside
To make dressing, whisk together rice vinegar, lemon juice, red wine vinegar, garlic, shallots, fresh herbs, and oil
Season with salt and pepper
Gently toss with salad mix
