Antipasto Salad Sandwich

This is a great sandwich for dinner parties

Preparation Time: 10-15 minutes
Cook Time: 10 minutes
Total Time: 20-25 minutes
Yield: 2 whole loaves (8 quarters)
Servings: 8

Ingredients
1/4 cup dijon mustard
1/2 pound salami, sliced
1/2 pound monterey jack cheese
2 cups roasted red peppers
1/4 cup olive oil
Salt and pepper
1/2 cup goat cheese, crumbled
1/2 cup mayonaise
1/2 pound prosciutto
1/2 pound mortadella
2 cups arugula or spinach leaves
2 large sour dough bread rounds uncut
 

Prep
Put both loaves of bread in oven at 350 degrees for 10 minutes to make bread crunchy
Cut bread into 4 whole slices width wise
Use toothpicks as your guide (make sure to remove all toothpicks before assembling sandwiches)
Take bottom slice: spread dijon mustard
Add salami, then monterey jack cheese
Then second slice of bread round
Spread roasted red peppers
Brush in a little olive oil on peppers, and salt and pepper
Spread goat Cheese
Third bread slice: spread mayonaise on bread
Nest comes prosciutto
Mortadella
Arugula or spinach
Top of bread
Wrap in plastic wrap and put in refrigerator for 1 hour because it will be easier to slice
Cut whole loaf into quarters
