Primavera Spaghetti Pie

A tasty twist on a pasta favorite

4 ounces spaghetti
1 egg, beaten
1/3 cup grated parmesan cheese
1 tablespoon margarine
2 cups broccoli florets
1 small red or green sweet pepper, cut into strips
1 medium onion, sliced
2 cups chopped, cooked chicken or turkey
1/4 cup grated parmesan cheese
3/4 teaspoon dried Italian seasoning, crushed
1/4 teaspoon salt
2 eggs, beaten
1/2 cup whipping cream
2 tablespoons grated parmesan cheese

For crust, cook spaghetti
Immediately drain
Stir together the 1 egg, 1/3 cup parmesan cheese, and 1 tablespoon margarine in a medium mixing bowl
Stir in hot spaghetti; mix well
Press spaghetti mixture evenly into bottom and up sides of a greased 9-inch pie plate
Set aside
Heat the 2 tablespoons margarine in a large skillet
Add broccoli, red or green sweet pepper, and onion
Cook until vegetables are just crisp-tender
Stir in chicken or turkey, the 1/4 cup parmesan cheese, Italian seasoning, and salt
Remove from heat
Spoon vegetable mixture into pasta crust
Stir together the 2 eggs and whipping cream in a small mixing bowl
Pour over vegetable mixture in the pasta crust
Bake, covered, in a 359 degree oven for 25 minutes
Uncover and sprinkle with the 2 tablespoons parmesan cheese
Bake for 10 minutes more
Let stand 10 minutes
Cut into wedges
