Bow Tie Pasta With Fresh Vegetables

Healthy and so yummie!

1 3/8 cups olive oil
1/4 cup red onion, diced
1/4 cup scallions, chopped
1 cup white mushrooms, sliced
1 cup Shitake mushrooms, sliced
1 6 oz. jar artichoke hearts, drained
1 1/2 cups tomatoes, diced
1 cup frozen peas
1/2 cup black olives, sliced
red pepper flakes
1/4 cup white wine
1/2 cup fresh parsley, chopped
1/4 cup fresh basil
salt and pepper
1 pound bow tie pasta (any pasta), cooked
1/4 cup feta cheese, crumbled
1/4 cup Parmesan cheese

Saute both onions and both mushrooms for about a minute.
Add artichoke hearts and saute for 3 minutes.
Add tomatoes, peas, black olives an some red pepper flakes, and cook for 5 minutes.
Add the wine, parsley, basil and salt and pepper, and cook a few more minutes.
Serve over cooked pasta.
Crumnble feta cheese on top and then sprinkle Parmesan cheese over top.
